mini frittatas


Ingredients  (Makes 12)

  • 6 eggs  beaten
  • 60 ml milk
  • 1 (160g) tin of tuna drained and flaked
  • 1  (150g) tin of sweetcorn
  • 50g  cheese (cheddar & feta both work really well)
  • Salt & black pepper



  1. Preheat the oven to 180°c
  2.  Add the eggs, milk, tuna, cheese, sweetcorn and cheese to a large mixing bowl and season with salt & pepper and mix with a fork until well combined.
  3. Spoon the mixture into muffin cases and bake for 20-25 minutes until the egg is golden and set.
