feel free to mix up the veg in this to use what you have at home

  • 1 Red onion chopped
  • 2 chopped red / green  chillies
  • 2 cloves garlic chopped / crushed
  • 2 tsp Thai green curry paste
  • 2 chopped organic (if possible) chicken breasts
  • Handful baby sweet corns
  • Handful chopped broccoli
  • Handful garden peas
  • 1 red pepper chopped
  • 1 tin coconut milk (full fat)
  • cashew nuts and coriander to serve


  1. First add the onion, chiili, garlic, pepper and curry paste to a large frying pan (I use a wok), and cook for 3 minutes
  2. Then add the chicken and cook for another 5 minutes, add the baby corns, peas and coconut milk. Cook for around another 5 minutes or until chicken is cooked.
  3. Top with fresh coriander and cashew nuts (optional)
  4. serve with rice and enjoy x
